Traditional Samoan Umu - similar to a hangi in Aotearoa except the food is not cooked underground, it is usually cooked above the ground rather than in a pit. The Samoan Umu begins with a fire to heat up the rocks, once the rocks are hot enough they are stacked around the parcels of food which are wrapped in banana leaves or tin foil. Leaves are placed over the food and it is then left to cook for a few hours before ready for serving. We tried this for lunch on a Sunday for tonai’i :)
